Strawberry Ice Cream with Chocolate Flakes

I decided to make a strawberry ice cream but wanted to keep it simple and still have that wow effect. I looked around and found a simple recipe but I just had to mess with it. (Never can leave recipes alone.)

So here we go. The only preparation that can be time consuming is the preparation of the strawberries. When you take the strawberries out of the packet, please rinse it! When you eat the ice cream you want to bite down on strawberries, not sand. I t cut the strawberries into quarters and sprinkle the sugar over it. Then, let it sit for around 2 hours. Yes, I know, but that is part of getting a ‘beautiful’ end product. See it like this; Picasso prepared his colors before he started to paint a masterpiece. It was time consuming to get it right, but in the end the painting was perfect. The same goes here, you are preparing the strawberries that are the main ingredient to the ice cream, and it has to be perfect. When it is done, you will be able to use all your sense to enjoy this perfect ice cream! It is a wonderful and creamy texture, and still is so simple. So….try it….it is fun and be creative!!! Strawberries and sugar

I have a Cuisinart 2-Quart Ice Cream Maker and the strawberries and chocolate will be added to the ice cream at the last 5 minutes.
For other makes follow the manufactures instructions for the best results.
**Important Tip: Nuts and other ingredients that are added to the ice cream should be no larger than a chocolate chip.

Ingredients

  • 3 cups fresh ripe strawberries, stemmed and sliced into quarters
  • 4 tablespoons freshly squeezed lemon juice
  • 1 1/2 Cups sugar, divided
  • 1 1/2 Cups whole milk
  • 2 3/4 Cups heavy cream
  • 1 1/2 Teaspoons pure vanilla extract
  • 1 Flake/1 cup of chocolate chips

Instructions

  • In a small bowl, combine the strawberries with the lemon juice and ½
  • cup of the sugar. Stir gently and allow the strawberries to macerate in
  • the juices for 2 hours. Strain the berries, reserving juices.
  • I measure 1 cup of strawberries and kept aside. Chopped the strawberries. (See important tip)
  • In a medium mixing bowl, add the remaining strawberries, milk, remaining granulated sugar and mix until the sugar is dissolved, I use a my Brawn hand mixer on low speed to combine. About 1 to 2 minutes. Stir in the heavy cream, reserved strawberry juice, and vanilla. Turn the machine on; pour the mixture into freezer bowl, and let mix until thickened, about 20 to 25 minutes. (Do not fill the freezer bowl higher than 1/2-inch from the top. The ingredients will increase in volume during the freezing process.)
  • Five minutes before mixing is completed, add the reserved chopped
  • strawberries and flaked/chocolate chips and let mix in completely.
  • The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.
